Hemicellulases and their applications in Various Industries

Hemicellulases are a group of enzymes that play a crucial role in the breakdown of hemicellulose, which is an essential component of plant cell walls. These enzymes have found applications in various industries such as food, baking, juice, feed, textile, detergent, and wastewater treatment due to their ability to break down complex carbohydrates into simple sugars.

Food Industry:

In the food industry, hemicellulases are used for various purposes, including improving the texture and taste of foods, reducing waste, and enhancing the nutritional value of food. Xylanase is one of the most commonly used hemicellulases in the food industry. It is used to improve the quality of bread by breaking down the arabinoxylan present in wheat flour. The enzyme also enhances the nutritional value of bread by increasing the availability of nutrients such as minerals and vitamins. Glucanase is another hemicellulase used in the food industry, primarily in brewing. It helps in the breakdown of glucans present in barley and other grains, reducing the viscosity of the mash and improving the extract yield and brewhouse efficiency.

Baking Industry:

The baking industry utilizes hemicellulases to improve the quality of baked goods such as cakes and bread. Xylanase is the most commonly used hemicellulase in the baking industry. It helps in the breakdown of hemicellulose in wheat flour, resulting in improved dough handling properties, increased volume, and a softer crumb texture. Pectinase, on the other hand, is used in the production of fruit juices to enhance the juice yield and clarify the juic.

Juice Industry:

Pectinases are commonly used in juice processing to break down the pectin in fruits and vegetables. By breaking down pectin, pectinases can help to reduce the viscosity of the juice, making it easier to process and increasing the yield of the extraction process. This helps to extract more juice from the raw materials and improve the clarity and stability of the final product. In addition to pectinases, other types of hemicellulases may be used in juice processing to target different components of the cell wall. For example, mannanase can break down mannan, another type of hemicellulose, which is often present in citrus fruits.

Feed Industry:

The feed industry uses hemicellulases to improve the digestibility of animal feed. Xylanase, mannanase, and glucanase are the most commonly used hemicellulases in the feed industry. They help in the breakdown of hemicellulose present in plant-based feed, making it easier for animals to digest and absorb nutrients.

Textile Industry:

Hemicellulases, such as pectinase, are used in the textile industry during a process called bioscouring. Bioscouring is a natural and environmentally friendly way to remove impurities from cellulosic fibers, such as cotton, hemp or flax, before they are processed into textiles.

Hemicellulases break down the hemicellulose component of plant material, which can be difficult to remove using traditional methods. By removing these impurities, the fibers become more absorbent and can be dyed or printed more easily. Hemicellulases play an important role in this process by breaking down the hemicellulose bonds that bind impurities to the fibers, making them easier to remove during washing..

Detergent Industry:

Hemicellulases are enzymes used in detergents to break down complex carbohydrates present in fabric stains such as chocolate and grass. Specifically, mannanase is a type of hemicellulase that breaks down the hemicellulose component of plant cell walls found in these stains, making them easier to remove during the washing process. The use of hemicellulases in detergents can improve the effectiveness of stain removal and reduce the need for harsher cleaning agents.

Wastewater Treatment Industry:

Hemicellulases can be used in wastewater treatment to break down the hemicellulose component of organic matter present in the wastewater. This can help reduce the overall viscosity of the wastewater and lower its biological oxygen demand (BOD) level.

In conclusion, hemicellulases have found wide applications in various industries due to their ability to break down complex carbohydrates into simple sugars. Their use has resulted in improved quality of various products, increased nutritional value, reduced waste, and improved environmental sustainability.
